Paleo Shrimp Enchiladas

Today is Fat Tuesday which means a day off work!  I don't really have any Mardi Gras plans as of now, except getting in a workout, grocery shopping, food prep for the rest of the week, and hitting up Academy to possibly use a gift card.

I gave you the bad news first (aka my flop), now on to the good news!  This recipe was delicious!  Even my non-Paleo roommate liked it.  He said he didn't even miss the cheese.



Paleo Shrimp Enchiladas
Replace the tortillas with cabbage leaves for a mexican favorite gone caveman. I am unsure if there are any "Paleo friendly" canned enchilada sauces; I opted to make my own.  There are many parts to this recipe, but don't be intimidated.  You can peel your shrimp, make your stock, and prep your marinade ahead of time.   Also, while the ingredient lists are long, most can be found in my pantry at any given time (tomato paste, spices, minced garlic, etc.)

Shrimp stock
hulls of 2 lbs of shrimp
1 quart water
2 tsp Salt

Combine ingredients in a stock pot.  Bring to a boil, then reduce to a simmer for as long as you have. 

Shrimp marinade
juice & zest of 2 limes
1 tbsp chili powder
1 tbsp minced garlilc
1 tsp salt
1 tbsp tequila
2 tbsp olive oil

Combine all ingredients in a large ziploc bag.  Add raw shrimp. Refridgerate for 30 minutes.

Enchilada sauce
1-2 chipotle peppers and 1-2 tbsp of adobo sauce
2 tbsp garlic
2 tsp chili powder
2 tsp cumin
1/4 tsp black pepper
salt to taste
2 cups shrimp stock (see recipe above)
1 - 6 oz can tomato paste
1 tbsp tequila

Put all ingredients in a saucepan and bring to a boil.  Reduce heat and let simmer while prepping the rest of the meal.

Enchiladas
about 20 cabbage leaves with veins removed
1 tbsp coconut oil
2 lbs marinated shrimp (see recipe for marinade above)
2 bags frozen peppers and onions mix (could use fresh bell peppers and onions, but trust me, this is much easier)

Put a pot of salted water on to boil; once boiling, turn of heat and add cabbage leaves.  Remove the cabbage leaves when they are soft.  In a large pan, heat coconut oil until melted.  Add pepper mix.  Sautee until peppers and onions are slightly soft.   Add shrimp.  Cook until shrimp are slightly pink.  Roll shrimp mixture into cabbage leaves and place seam down in a casserole dish.  Cover with enchilada sauce and bake at 350 degrees for 20 minutes.

Serve with guacamole and garnish with cilantro and fresh lime. 

shrimp stock - I think shrimp turn the prettiest color when cooked.

I love Mexican food.  Seriously.  I could eat it every day of the year!

Weekend of Highs and Lows

Friday:

I served myself up to mosquitoes for dinner grilled burgers and had my family over.  Then, hit the hay early.

Saturday:

5:30 wake up call.  Sudafed. Coffee. Breakfast. Checked the weather to see this:

Um...55% chance of rain at 8 am when my 10 mile long run is supposed to start at 7:00.  I pondered it a little while, then decided to be a dare devil and run anyway.

Since discovering my love of audiobook while running, I gave NPR podcast while running a try.  Win!

An hour and forty minutes after setting out, I turned onto my road and a huge raindrop hit my face. I made it into the house and the bottom fell out.

Return of double digit mileage also meant the return of an ice bath with hot cider.


My afternoon consisted of a nap, finishing my book, which did not get any better, and trying this beer:




Loved it!  My stomach always bothers me after long runs, and this beer had medicinal qualities.  After sipping this dark, smooth, slightly bitter elixir, my tummy ache eased and I felt much better.

My evening consisted of more cardio in the form of dancing at another Mardi Gras ball.  The theme was the Louisiana Bicentennial, so our posse dressed as Jean Lafitte's gang of pirates.

So.much.fun!

Sunday:

My morning started with awful news that my grandpa passed away.  I spent the rest of the day with family and too much food. 


I woke up this morning and started my day with a healthy breakfast.  My lunch is going to consist of lots of veggies and nutritiousness (word?) and I'm going to fit in a run before I head to the church for the wake.  People have been so generous and sent delicous food and treats for us to enjoy over the next couple of days, but I am going to try my hardest to avoid mindless snacking and eating when not hungry.

It is doubtful that I will be posting for the next couple of days, but when I return, I will have lots to tell you (hello Paleo challenge pre-reqs!).

Does Dancing Count as Cardio?

Happy Tuesday!  I've missed y'all!!!!

I have had a crazy few days, filled with errands, workouts, fun, whiskey, dancing, waiting rooms, couches, great friends from near and far, bands in crazy costumes, and unhealthy food.

I'll try my best to keep my recap brief.  First off, I had a hell of a week of workouts last week!  I really pushed and was sore as hell and happy with myself.

Monday - rest
Tuesday - this CrossFit WOD (135# & box HSPU in 5:57)
Wednesday - morning: hot 4 mile run, evening: this CrossFit WOD (23:24.  I hate burpees!)
Thursday - this CrossFit WOD with 65# (woohoo!  I was terrified to go this heavy but I got to 5 in minute 5! and then did about 2-3 per minute for the remaining time.)
Friday - awesome 4 mile run and dancing!
Saturday - dancing!
Sunday - rest
Monday - 5 mile run + 2 mile walk (It was supposed to be a 9 mile long run but my weekend indulgences caught up with my and my stomach hurt soooo bad.  Plus, I got lost!)

Now, for the fun stuff!

Friday night: One of my besties who now lives in Jacksonville, FL was in town for her birthday.  We did dinner at Luna, followed by the Molly Ringwald's, a totally awesome local 80's cover band at a bar.  I danced until I couldn't dance anymore.

 Saturday: The day was pretty lazy.  I ran a couple of errands.  Then, I got all gussied up and went to a Mardi Gras ball.  My friends are members of the krewe and invited me as their guest.  This, of course, meant more drinking and much, much more dancing!  The limo picked us up at 4:00 PM and the party began!  Another fun local band, the Chee Weez, played at the ball.  I ran into so many friends and had the BEST night!

Sunday: Slept very, very late.  Had a late breakfast lunch of eggs, ham, hashbrowns, biscuit, AND pancakes at a local diner with my date from the night before.  Watched that gorgeous Serbian, Djokavic, win the Australian Open.  Watched the Kardashians leave NYC.  Watched the RHOA take over South Africa.  Uberly unproductive day.

Monday: Woke up very, very, very, early.  Went to the surgical center to see my dad before he went into surgery (he had a torn rotator cuff repaired).  Hung out in the waiting room, munched on some McDonald's breakfast burritos, and read local magazines while wondering why I'm never featured in "Society Spice" until he was taken to recovery.  Went home, napped, ate crap, and did a couple of loads of laundry.  Went on my neglected Sunday Monday long run, which was awful and cut short. (see above)  Took Lola to see her paw-paw (my dad) and ate BlueBell.  Hit the hay very early to prepare myself for my short work week.

As you can see, my diet has been atrocious!  I've gotta re-focus. 


***Sorry for the lack of pictures.  I did actually take a lot through the weekend, but most are out of focus and too ridiculous to post for all the internet to see.  Plus, I have been too busy lazy to upload them.
